Yield: Two 8 x 8 cakes

  • 2 1/4 c flour
  • 1 1/4 t ginger
  • 1 1/4 t cinnamon
  • 1/2 t ground cloves
  • 1/2 t nutmeg
  • 1/2 t salt
  • 2 t baking powder
  • 2 eggs
  • 3/4 c brown sugar
  • 3/4 c molasses (or syrup)
  • 3/4 c melted shortening
  • 1 c boiling water
  • 1/2 t baking soda

Combine flour, ginger, cinnamon, cloves, nutmeg, salt, baking powder in bowl 1.  Combine eggs, brown sugar, molasses and shortening in bowl 2.  Combine boiling water and baking soda in bowl 3.  Beat contents of bowl 2, then alternately add the contents of bowl 1 and 3.

Bake at 350 degrees for 35 minutes in a 9 x 13 pan.  Once the cake cools dust with powder sugar.
