Yield: 9 x 13 pan

  • 6 Lasagna Noodles (cooked)
  • 1 c onions chopped
  • 1 1/2 c carrots cut
  • 2 t minced garlic
  • 1 3/4 cup spaghetti sauce
  • 1/2 c water
  • 1 t basil
  • 1 t oregano
  • 2 eggs
  • 2 cups low fat cottage cheese
  • 4 T Parmesan cheese
  • 1 10 oz chopped spinach (frozen)
  • 1 c sliced mushrooms
  • 1 1/4 c sliced zucchini
  • 1 c shredded mozzarella cheese
  • 1/4 sliced black olives

Saute onions, carrots and garlic for 10 minutes.  Add sauce, water and spices.  In a separate bowl combine eggs, cottage cheese, Parmesan cheese and veggies.

Layer in 9 x 13 pan sauce, noodles, cheese mix, sauce, noodles, cheese mix and top with sauce.  Cover with Aluminum Foil and bake at 350 degrees for 35 minutes. Remove foil add mozzarella and olives.  Back in the oven for an additional 15 minutes.  Remove from oven and let sit for 10 minutes.
