Cuban Bread or rolls (something soft)
dill pickle slices
1 lb pork roast or loin, baked and sliced
1 lb ham steaks, sliced ~ 1/4 inch thick
1/2 lb Swiss cheese, sliced, (Baby Swiss is best)
mustard, course and/or spicy
Mojo Sauce – purchased or recipe below
Spread margarine on one side of each piece of bread, to grill the sandwich. Layer the inside, from bottom to top: ham, pork, Mojo Sauce, pickles, Swiss cheese and a light spread of mustard on the lid. Grill on a Panini press or skillet 8-10 minutes.
Variation: omit the margarine, wrap the sandwich in tinfoil and bake at 300 degrees, for 30 minutes.
5 cloves garlic, processed through a garlic press
1/2 c olive oil
2 T white vinegar
1/4 c orange juice
2 T lemon juice
2 T lime juice
salt and pepper to taste
Combine all ingredients in a bottle and shake well.
