2 c Granny Smith apples
2 c Golden Delicious apples
1/4 c water
3 T sugar
3/4 t lemon juice

16 oz package frozen puff pastry
1 egg

powdered sugar

Peel, core and cut apples, add to a sauce pan with the
water, sugar and lemon juice. Simmer about 12 minutes,
until apples are very tender. Mash lightly and cool.
Filling can be made ahead and refrigerated for two days.

Preheat oven to 400 degrees. Line 2 baking sheets with
parchment paper, or in a pinch a brown paper bag.
Cut thawed pastry sheet into 16 pieces, place a small amount of
apple mixture on each square. Paint the edges with egg
and fold to form a triangle. Paint tops with egg,
make a small slit in the top to vent. Place on baking sheet
and refrigerate about 15 minutes. Bake 8 – 10 minutes
until just beginning to brown. Reduce heat to 350,
bake another 8 – 10 minutes.

Once the turnovers are cool drizzle with icing.
