8 cups water
1 cup Barley, medium
1 large onion, chopped
4 potatoes, peeled and chopped
1 teaspoon salt
1 teaspoon pepper
2 carrots, chopped
2 cups of chopped ham
8 cups of Kale, chopped or torn

Add the first 8 ingredients to a soup pot, bring to a boil and simmer for 30 minutes. Add the kale and simmer 30 minutes more. Taste the soup after cooking and add additional salt and pepper if needed.
