1 cup raisins
1 cup golden raisins
1 cup currants
1/2 cup dates
2 cups Granny Smith apples, peel and seed
1/4 cup dried apricots
1/4 cup prunes
2 oz candied orange and lemon peel
1 cup dark brown sugar
1 tablespoon orange marmalade, chop fruit pieces
1 teaspoon lemon zest
2 tablespoons lemon juice
1 tablespoon orange zest
1/4 cup orange juice
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/8 teaspoon ground cloves
1/4 cup apricot brandy

Very finely chop first 8 ingredients. Add all other ingredients and mix well, store in an air tight container with minimal air space, refrigerate. Age at least 4 weeks for best flavor.

1 – Mincemeat will keep for a year, if not moist enough, add more brandy and stir.
2 – Very finely chopped = the size of rice.
3 – After four weeks if the brandy flavor is too strong add an apple.
4 – You can substitute apple pie spice for the four spices.
5 – If you think it needs more spice add more nutmeg and cinnamon, not cloves.
