2 cups sugar
3/4 cup vegetable oil
16 ounces of canned or fresh cooked, mashed pumpkin
3 1/2 cups flour
2 teaspoons baking soda
½ teaspoons baking powder
1 teaspoon salt
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
1 teaspoon nutmeg
2/3 cup water
2 teaspoons vanilla extract
1 cup chopped pecans, optional
Combine sugar and oil, mix well. Add eggs, one at a time, mixing well after each addition. Stir in pumpkin. Combine all dry ingredients in a small bowl, add to pumpkin mixture in small amounts, alternating with the addition of water. Stir in vanilla and pecans.
Bake in a lightly greased pan, makes
2 standard size loaves (325 degrees for 1 hour and 10 minutes) or
8 mini loaves (325 degrees for 30 minutes) or
7-8 dozen mini muffins (300 degrees for 10 minutes).
Serve with cream cheese and or peach preserves.
