14.5 oz can of petite diced tomatoes
2 small zucchini, diced
1 sweet red pepper, chopped
1 green pepper, chopped
2 cups chicken broth
1 teaspoon dried basil
1 teaspoon dried crushed thyme
1 teaspoon dried oregano
1 bay leaf
3 tablespoons tomato paste
2 cups chopped chicken

Add all ingredients to a soup pot, bring to a boil, cover reduce heat and simmer 1 hour.

Variation: Consider adding, during the last ten minutes, a 1/2 cup of small sized pasta.

Yield: 4 servings.
