3/4 cup margarine
1 cup sugar
1 teaspoon vanilla
2 1/2 cup flour
1 teaspoon baking powder
1 teaspoon salt
Combine flour, baking powder and salt in a small bowl, set aside. Mix margarine, sugar, eggs and vanilla thoroughly. Gently blend in flour mixture.
Cover dough with plastic wrap and chill 1 hour.
Roll 1/8 to 1/4 inch thick on floured surface,if dough is too moist kneed in a small amount of flour. Work with the dough as little as possible and your cookie will be lighter and fluffier. Cut into shapes. Bake on ungreased cookie sheet, 400 degrees, 6-8 minutes.
Yield 4 dozen 3 inch cookies.
Sprinkle with sugar before you bake or add icing after cool.
Quick icing: mix a thin frosting of powdered sugar and milk. Set up cooling racks with paper bags under them. Press the top of each cookie into the icing, turn cookie upright onto cooling rack, sprinkle with sugar before frosting dries and hardens.
