One boxed white cake mix
1 tablespoon coconut extract
2 cups sweetened coconut flakes, divided
Toast 1 1/2 cups coconut: spread coconut flakes on a cookie sheet and place in a 300 degree oven, stir every 2 minutes until lightly browned.
Mix one boxed white cake as directed, using the eggs whites recipe. Gently stir in the coconut extract and 1/2 cup coconut flakes, bake as directed on the box.
While the cake cools make one batch of Boiled Frosting adding 1/2 t coconut extract to the egg whites. Cover the cake with frosting and dust with toasted coconut. For a 2 layer cake spread a thin layer of orange marmalade between layers.
