3 ears of corn, cut from the cob
1 tablespoon vegetable oil
1/2 cup sweet onion, minced
2 cloves garlic, minced
1 teaspoon lime juice
1/4 cup mayonnaise
1/4 cup grated cheddar cheese
A pinch of salt
1/4 teaspoon smoky paprika chipotle seasoning
2 tablespoons roughly chopped fresh cilantro

Heat the oil in a saucepan over medium heat and sauté the onions and garlic, about 5 minutes. Add the corn kernels and cook until warmed. Add the lime juice, mayonnaise, salt and seasoning, stir well. Remove from heat, stir in cheese, then add cilantro, mix well and serve.
