1 cup diced salami, dice ~ ¼ x ¼ inch
1/4 cup finely grated Parmesan cheese
1/4 cup chopped pepperoncini salad peppers
1/2 cup black olives, drained and diced
1/4 cup green olives, drained and diced
4 ounces provolone cheese, diced ~ ¼ x ¼ inch
1 celery rib, finely chopped
1/2 cup red bell pepper, finely chopped
2 tablespoon olive oil
1/4 cup chopped fresh parsley

Stir together all ingredients. Serve immediately or cover and chill for up to 5 days before serving. Serve with French bread crostini.

Makes about 4 cups

Variation 1: serve over a block of cream cheese with crackers
Variation 2: toss with lettuce to make a salad.
