Graham Cracker Crust
2 cups graham cracker crumbs
6 ½ tablespoons butter or margarine, melted
3 tablespoons sugar
Combine all crust ingredients and mix well. Press mixture into a 9 inch pie dish. Bake 350 degrees for 6-8 minutes and cool completely before filling with the ice cream mixture.
1 quart vanilla ice cream, softened
6 oz. can frozen lemonade concentrate, thawed but still very cold
8 oz. container frozen whipped topping, thawed
1 lemon, zested
Combine the ice cream and lemonade, mix well, spoon into the crust, freeze till firm. Just before serving cover the pie with whipped topping and top with the zest of one lemon.
