4 lb. * Pork Shoulder or Boston Butt
Coconut Oil
2 inch of fresh ginger
16 cloves of garlic
4 medium onions
2 Cinnamon Stick
1 teaspoon cloves
4 Bay Leaves
2 teaspoon Coriander
20 Cardamom Pods
4 teaspoons Cumin
4 tablespoons Paprika
3 teaspoon Cayenne Pepper
1 1/2 teaspoons salt
1 1/2 teaspoons pepper
56 oz. tomatoes

Cut the pork into 1 inch cubes. Brown pork in a skillet in coconut oil. Remove pork from skillet and place in a large pot. Process ginger, garlic and onions in a food processor or Ninja and add to the pot with the pork and saute about 5 minutes. Process the tomatoes in a food processor or Ninja, add the tomatoes and spices to the pot, stir well and simmer 2 hours, stirring occasionally. Serve over Basmati rice and dust with fresh cilantro (optional).

* 4 lbs. of meat would require starting with about a 6-7 lb. roast
