½ cup onion
2 cloves garlic
1 large or 2 small jalapeno peppers, seeded
2 teaspoons dried thyme
1 tablespoon light brown sugar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ground allspice
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
6 boneless chicken breast halves

Process all but chicken in a food processor. Rub the mixture on the chicken and refrigerate 1 hour. Cook chicken in a skillet coated with cooking spray, 5-7 minutes per side, or until chicken is done.

Serve with rice and Pineapple Salsa
