2 (15 oz) cans black beans
1 tablespoon olive oil
¾ cup onion
1/3 cup green pepper
3 cloves garlic
1 teaspoon salt
½ teaspoon pepper
1 teaspoon oregano
1 teaspoon ground cumin
1 bay leaf
3 tablespoons vinegar
6 ounces white wine
2 teaspoons sugar

Process onions, green pepper, and garlic in a food processor or blender. Saute onion, green pepper and garlic in olive oil, about 5 minutes. Add salt, pepper, beans (juice and all), oregano, cumin, bay leaf, vinegar and wine. Cover and simmer over low heat for 15-20 minutes, stirring occasionally. Remove the bay leaf, stir in the sugar. Cover the pot and remove from heat, let stand for 10 minutes. Serve over rice, consider garnishing with fresh cilantro and chopped white onions.
