Yield: 7 cups
• 1-2 lb steak, cut into bite size pieces
• 4 small leeks, split and cut into 1/2-inch pieces
• 2 large onions, chopped
• 2 16 oz cans tomatoes, chopped and undrained
• 4 cups water
• 1/2 t salt
• 1 t pepper
• 4 stalks celery, cut into pieces
• 4 carrots, sliced

Combine beef, leeks, onions, tomatoes, water, salt, and pepper; bring to a boil. Cover, reduce heat, and simmer 1 hour. Add celery and carrots; cover and simmer 30 minutes or until tender. Add meat to soup.
