I have included the flatbread recipe I use, but you could use pre-made thin pizza crust from a can to save lots of time.

Flatbread
1 cup warm water *
1 pack dry yeast
1 teaspoon sugar
1 teaspoon salt
2 tablespoons olive oil
3 cups flour, divided
Cornmeal

* The water should be warm to the touch, if it is too hot for you to keep your hand in it for several minutes comfortably then it is too hot for the yeast.

Combine warm water and yeast, stir until dissolved. Stir in sugar, salt and oil. Stir in flour. Knead until smooth. Place in a greased bowl, turn over, cover and let rise in a warm location until doubled in bulk, about 30 minutes with quick rise yeast.

Put a pizza stone into the oven and preheat to 400 degrees. If you don’t have a pizza stone just use a cookie sheet, it won’t retain heat the way a stone will and it may take a bit longer for your flatbreads to cook but it will work just fine.

Once your dough has risen divide it into 8 equal pieces. There are three possible techniques to shaping the dough: a rolling pin with wax paper to sandwich the dough between, a pasta machine – I set mine to “2”, or just use your hands and press each piece as flat as possible. No technique is better than another. Whatever method you choose be sure to use plenty of flour to help prevent the dough from sticking to everything. Perfect shape is of no consequence: round, oval, irregular, it doesn’t matter. The goal is 8 thin pieces of dough.

Dust the baking surface (pizza stone or cookie sheet) with corn meal just before placing a couple pieces of the dough on the hot surface. Bake for 6 minutes, remove from the oven and cool on a wooden board or cooling rack.

At this point the flatbread can be stored for several days in an airtight container until ready to serve.

Ready to serve: preheat the oven to 400 degrees. Assemble the flatbreads with the toppings of choice on a cookie sheet and bake, the length of time needed to bake will depend on the toppings you choose, watch for the cheese to be melted and the toppings hot, it will take at least 6 minutes.

2 – Prosciutto, Asparagus, Swiss cheese, Lemon zest

3 – Portabellas, spinach, figs, Le Gruyere cheese and fresh oregano
Brush flatbread with olive oil
Add all or hold back spinach until after baking
Bake

4 – Pizza sauce, pepperoni, portabellas, provolone, parmesan
Cover flatbread with pizza sauce
Add pepperoni, portabellas and cheeses
Bake

5 – Sundried tomatoes, green onions, pesto, provolone
Spread Pesto over flatbread
Add sundried tomatoes, and provolone
Bake
Sprinkle with green onions

6 – Roasted red peppers, artichoke hearts, caramelized onions,
Le Gruyere, balsamic reduction

7 – Blue cheese, caramelized onions, portabellas,

8 – Bacon, cheddar, green onions, cherry tomatoes, maybe spinach

11 – Smoked Salmon, cream cheese, capers,
thinly sliced red onion, lemon zest

Spread cream cheese on warm flatbread
Add smoked salmon, capers and onions
Grate lemon zest on top – serve

12 – Dried cranberries, caramelized onions, feta,
balsamic reduction

Brush flatbread with olive oil
Add Cranberries, onions and feta
Bake
Drizzle with balsamic reduction
