1 lb. fresh green beans
1 tablespoon of margarine or butter
1 clove garlic, minced
1 cup mushrooms, sliced (choose your favorite type)
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup sweet red pepper, diced
2 tablespoons green onions, chopped
Prepare the veggies, keeping them in separate piles: cut off the tough tips of the green beans and chop into bite sized pieces, mince the garlic, slice the mushrooms, dice the red pepper, and chop the green onions.
Steam the green beans.
Sauté the garlic and mushrooms in the margarine about 5 minutes, season with salt and black pepper and stir well.
Add the green beans and mushrooms to a serving bowl and toss gently, top with the red pepper and green onions and serve.
