1 kohlrabi, peeled and coarsely grated
1 green apple, peeled and coarsely grated
2 tablespoons lemon juice
2 cups water
1/4 cup crumbled goat cheese
2 tablespoons chopped pecans
2 tablespoons dried cranberries

For the dressing:
2 tablespoons honey
1 tablespoon red wine vinegar
3 tablespoons olive oil
1 tablespoon dijon mustard
A couple shakes of salt

Place all of the ingredients for the dressing in a jar and shake well.

Coarsely grate the kohlrabi and place in a serving bowl. Coarsely grate the green apple and place into a bowl with the lemon juice and water for a few minutes, drain and add the apple to the serving bowl. Toss the kohlrabi and apple well and pour dressing evenly over the top.

Top with goat cheese, dried cranberries, pecans.
