8-10 medium tomatillos, husked
1/2 cup chopped onion
1 teaspoon minced garlic
1 jalapeno, seeds removed and chopped
2 tablespoons chopped cilantro
2 tablespoons chopped fresh oregano
1/2 teaspoon ground cumin
1 1/2 teaspoons salt
1 1/2 cups water

Place all ingredients into a sauce pan. Bring to a boil and simmer until tomatillos are soft, about 15-20 minutes.

Using a blender, puree the mixture. Refrigerate in a glass jar until ready to use.
